Jamaican Banana Cupcake

For the recipe of Jamaican Banana Cupcakeyou will need:

Shortening - 2.3 cups
Sugar - 1.4 cups
Vanilla - 1 tsp
Egg - 2 pcs.
Milk - 1 cup
Bananas (mashed with a fork) - 1 cup
Flour - 2.4 cups
Baking powder - 1 tsp
Soda - 1 tsp
Salt - 1/2 tsp
Nuts (ground) - 1/2 cup

For the topping:
Butter - 1/3 cup
Brown sugar -  2/3 cup
Milk - 2 tbsp
Coconut - 1 cup

To prepare the Jamaican banana cupcake should:

Preheat the oven to 180C. The form of grease and sprinkle with flour. In a large bowl combine shortening, sugar, vanilla and eggs. Knead the dough is homogeneous, add the milk, bananas, flour mixed with baking soda and baking powder. Sprinkle the dough with nuts, knead again and pour into the mold.
Bake for about 45 minutes.
For the topping in a small saucepan melt the butter, add brown sugar and milk. Cook over medium heat until smooth. Then add the coconut. Drizzle this mass of cupcake and put under the grill until a brown crust.
