For the recipe of Cupcake Curd you will need:

For the dough:
Flour - 2 cups
Butter - 250g
Cottage cheese - 300g
Sugar - 1 cup
Egg - 4 pcs.
Raisins (seedless) - 1/2 cup
Lemon - 1 pc.
Baking soda - 3.4 h. liter.
Salt - to taste


Powdered sugar - 1 cup
Cranberry juice - 3 tbsp. L.

To prepare Cupcake Curd should:

Whip butter with sugar until white, whisking, add one egg and lemon zest, juice of half a lemon, minced cottage cheese, raisins, salt, sifted flour, along with the lemon juice dissolved soda. Knead the dough thoroughly, put in a greased cake pan and bake at moderate temperature for about 50 min. The cooled cake to remove from the mold, cover with cranberry glaze (powdered sugar mixed with cranberry juice) and dry in a warm oven.
