Potato Soup with Meatballs

Ingredients of Potato Soup with Meatballs for 4 people:


450 g frozen green beans
1 onion
500 g potatoes
2 tablespoons olive oil
1 teaspoon dried thyme
1 can (800 g) was purified tomatoes
500 ml of broth
1 bunch parsley
500 g mixed minced meat
1 tablespoon mustard
3 tablespoons of low-fat cottage cheese
4 tablespoons of grated Parmesan cheese
Salt, ground black pepper

How to Prepare Potato Soup with Meatballs:


Beans defrost. Onions cleaned, cut in half and cut into thin strips. Sauté onion in a pan with olive oil. Add potatoes, thyme and tomatoes (with juice). Pour the broth. Cook for 15 minutes.

Prepare the parsley. Several leaflets postpone for decoration and chop the rest of the break. Beans cut into pieces. Minced meat with salt, pepper and season with mustard. Mix with cottage cheese and chopped parsley. From stuffing to form meatballs and drop those into the boiling soup with beans.

The soup simmer another 10 minutes.

Soup pour into a deep dish or bowl, sprinkle with grated Parmesan and garnish with parsley leaves.
